Recipe and preparation of Traditional Matcha
The preparation of a traditional Matcha follows precise steps, respecting the ancestral Japanese art of the tea ceremony:
Ingredients and materials:
- Large bowl for whisking matcha
- Bamboo whisk (chasen) - Bamboo measuring spoon (chashaku)
- Hot water (simmering, between 70°C and 80°C)
- Premium Matcha ceremony quality
Preparation steps:
1. Heat the bowl (optional but recommended)
Before you begin, pour hot water into the matcha bowl to warm it up. This helps maintain the right temperature of the tea. Pour out the water and dry the bowl with a clean cloth.
2. Measure the matcha
Use about 1-2 chashaku scoops (or 1 teaspoon) of matcha powder. You can sift the powder before adding it to the bowl for an even smoother mixture.
3. Add hot water
Add about 60 to 80 ml of hot water (between 70°C and 80°C) to the bowl. The amount of water can vary depending on the desired thickness of the tea:
Usucha (light matcha): 1 to 2 chashaku spoons or 1 teaspoon of matcha for 60-80 ml of water.
Koicha (thick matcha): More powder (2-3 teaspoons) with less water (40-50 ml).
4. Whisk the matcha
Use the bamboo whisk (chasen) to mix the powder and water. Hold the whisk with a light hand and start whisking vigorously, forming an "M" or "W" shape with your movement. Continue until you get a fine, homogeneous foam on the surface.
Usucha : The mixture should have a light texture, with a thin layer of foam.
Koicha : No foam, but a thicker, almost creamy texture.
5. Taste
Once the matcha is well whisked, it is ready to be consumed. Hold the bowl with both hands and savor slowly in several sips.

Use good quality water so that the taste of the matcha is not altered.
Water temperature is essential: water that is too hot can make the matcha bitter.
Take the time to whisk well to obtain a perfect texture, especially if you want a very frothy usucha.

Recipe and preparation of Matcha Latte
Making a Matcha Latte is simple and delicious , and combines the sweet flavor of matcha with the creamy texture of milk.
Ingredients and materials:
- Matcha Premium Ceremony: 1 to 2 bamboo measuring spoons "chashaku" (or 1 teaspoon)
- 200 ml of milk (classic or almond, oat, soy, coconut, etc.)
- 50 ml of hot water (simmering, 70-80°C)
- Bamboo chasen whisk and/or an electric frother
- Large bowl or cup
- Sugar or sweetener (optional): honey, maple syrup, coconut sugar, or sweetener to taste
Preparation steps:
1. Sift the matcha
Place 1 to 2 bamboo “chashaku” measuring spoons (or 1 teaspoon) of matcha powder in a bowl or cup.
You can use a sieve to avoid lumps and get a smoother texture.
2. Add hot water
Add about 50 ml of hot water (simmering, between 70°C and 80°C) to the matcha powder. Use the bamboo chasen whisk or an electric frother to mix well. Whisk until the mixture is smooth and frothy.
3. Heat and froth the milk
Heat about 200 ml of milk (regular or vegetable) to the desired temperature. You can heat it in a saucepan or in the microwave. Use a milk frother to get a nice foam, if you prefer a frothy matcha latte. If you don't have a frother, you can simply heat the milk without frothing it.
4. Sweeten (optional)
Add a little sugar, honey, maple syrup or sweetener of your choice to the matcha, according to your taste. Mix well.
5. Assemble the Matcha Latte
Slowly pour the hot milk over the matcha mixture in your mug. Stir gently to combine the milk and matcha. If you frothed the milk, pour the hot milk first and then add the froth on top for a better latte effect.
6. Decorate (optional)
You can sprinkle a small pinch of matcha powder on the mousse for decoration, or add a little cocoa or cinnamon according to your taste.
Iced Matcha Latte Option:
For an iced matcha latte, simply mix matcha and hot water as described, add ice cubes to your glass, then pour in the cold milk.
